  • 1 box (15.25 ounces) chocolate or devil's food cake mix
  • ½ cup canola or vegetable oil
  • 1 cup water
  • 3 large eggs (for topping)
  • 1 box (5 ounces) instant chocolate pudding mix
  • 3 cups cold milk
  • 1 container (8 ounces) whipped topping, thawed

Instructions

  1. Preheat your oven to 350°F.
  2. Grease a 9×13 baking dish with cooking spray.
  3. In a bowl, blend ricotta, sugar, vanilla extract, and room-temperature eggs until smooth.
  4. In another bowl, combine the chocolate cake mix with canola oil and water; mix until fully blended.
  5. Pour the chocolate mixture gently over the ricotta layer in the baking dish.
  6. Bake for about 70 minutes or until a toothpick inserted comes out clean.
  7. While cooling, whisk together three eggs with pudding mix and milk until smooth; let sit for five minutes to thicken.
  8. Spread whipped topping over the cooled cake, then layer on the pudding mixture. Chill before serving.
