  • 1/2 cup plain bread crumbs
  • 1/2 cup fresh grated parmesan cheese
  • 1 egg
  • 4 garlic cloves (minced)
  • 56 cups beef stock
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 4 oz tomato paste
  • 1/2 yellow onion (minced)
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 1 cup water
  • 1 tbsp dried parsley
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes (more or less to taste)
  • 1 tsp salt (more or less to taste)
  • 1/2 tsp black pepper (more or less to taste)
  • 1/4 cup fresh grated or shaved parmesan cheese
  • 1 tbsp olive oil (for cooking)
  • 1/21 tsp salt (more or less to taste)
  • 1 tsp red pepper flakes (more or less to taste)
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano

Instructions

  1. Prepare the meatballs by mixing ground beef, breadcrumbs, parmesan, egg, minced garlic, and seasonings in a bowl. Shape into small balls.
  2. Cook the meatballs in olive oil over medium heat until browned on all sides. Remove and set aside.
  3. Sauté diced onion and carrots in the same pot for about 5 minutes. Add diced tomatoes and minced garlic; cook until fragrant.
  4. Pour in water and beef stock, then stir in tomato paste and seasonings. Bring to a boil before adding the meatballs back into the pot.
  5. Add gnocchi and cook according to package instructions until they float.
  6. Serve hot with freshly grated parmesan on top.
