  • 3/4 cup (110 g) high-quality white chocolate, chopped (not white chocolate chips)
  • 1 1/2 cups (300 g) granulated sugar
  • 3 tablespoons lemon zest (from about 3 large lemons)
  • 3 large eggs, plus one egg yolk, room temperature
  • 1 teaspoon vanilla
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 teaspoon salt
  • 1 1/2 cups powdered sugar, sifted
  • 4 to 5 tablespoons fresh lemon juice or whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Melt the unsalted butter and chopped white chocolate together using a double boiler; let cool for 15-20 minutes.
  3. In a large bowl, combine granulated sugar and lemon zest; massage to release oils.
  4. Whisk in eggs until blended, then add the cooled butter and chocolate mixture along with vanilla extract.
  5. Gently fold in flour and salt until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for about 25 minutes until edges are golden brown and center is set.
  8. Allow to cool completely before glazing with powdered sugar mixed with lemon juice.
