  • 1/2 cup coconut oil, melted
  • 1 cup fresh lemon juice
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 cup water

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, combine rolled oats, flour, brown sugar, baking soda, and salt. Mix in melted coconut oil until crumbly.
  2. Press half of the mixture into a greased baking dish to form the crust base.
  3. In another bowl, whisk together fresh lemon juice, granulated sugar, cornstarch, vanilla extract, and water until smooth. Pour over the crust.
  4. Sprinkle the remaining crumble mixture on top.
  5. Bake for 38 minutes or until golden brown. Allow to cool completely before slicing.
