  • 2 eggs
  • ½ cup water
  • ½ cup sugar (for syrup)
  • ½ cup packed fresh lilac blossoms (for syrup)
  • 1 ½ cups icing sugar (plus more as needed)
  • 2 tbsp reserved lilac simple syrup
  • 1 tbsp milk (plus more as needed)
  • few drops violet food coloring

Instructions

  1. Preheat your oven to 350°F and prepare your mini bundt pan with non-stick spray.
  2. Blend sugar and lilac blossoms in a food processor until fragrant.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a mixer, cream together lilac sugar mixture and softened butter until smooth.
  5. Add eggs one at a time, ensuring complete incorporation before adding the next.
  6. Gradually mix in dry ingredients alternately with milk until just combined.
  7. Fill each bundt mold evenly with batter and bake for 20–25 minutes or until a toothpick comes out clean.
  8. While baking, make lilac syrup by simmering water and sugar; add blossoms to infuse flavor.
  9. Cool cakes slightly before brushing with syrup and drizzle glaze on top.
