  • 1 small yellow onion, minced
  • 3 cloves garlic, minced
  • 1.5 tablespoons tomato paste
  • 0.5 cup sun-dried tomatoes
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon red chili flakes
  • 1 teaspoon salt
  • 0.75 cup vegetable broth
  • 1 cup coconut milk
  • 850 grams canned chickpeas, drained and rinsed
  • Handful of spinach or basil, torn

Instructions

  1. Heat olive oil in a pan over medium heat. Add minced onion and garlic; sauté until fragrant and translucent (about 5 minutes).
  2. Stir in sun-dried tomatoes, tomato paste, Italian seasoning, red chili flakes, and salt. Cook for another 3 minutes.
  3. Pour in vegetable broth and coconut milk; mix well. Gently add drained chickpeas and cover the pan. Cook for 2 to 3 minutes until heated through.
  4. Just before serving, stir in torn spinach or basil for added freshness.
