  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a bowl, combine onions, bell peppers, tomatoes, garlic, olives, olive oil, oregano, salt, and pepper; mix well.
  3. Spread the vegetable mixture in the baking dish and place the fish fillets on top. Squeeze lemon juice over the fish and sprinkle with zest.
  4. Bake uncovered for 20–25 minutes until the fish is opaque and flakes easily with a fork.
  5. Garnish with fresh parsley and serve with lemon wedges.
