  • ½ teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ½ cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. 1. Marinate the Chicken: Whisk together olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper in a bowl. Add chicken breasts and coat well; marinate for at least 30 minutes (or overnight for more flavor).
  2. 2. Cook the Chicken: Heat a skillet over medium heat and cook the marinated chicken for about 5–6 minutes on each side until golden brown and fully cooked. Let it rest before slicing.
  3. 3. Assemble the Bowls: Divide rice or quinoa into serving bowls. Top with sliced chicken and add cherry tomatoes, cucumber, red onion, and feta cheese.
  4. 4. Add Sauce & Garnish: Drizzle tzatziki sauce over each bowl and garnish with fresh parsley.
