  • Pepper, to taste
  • Juice of 2 lemons
  • Zest of 2 lemons
  • 1 cup jasmine rice
  • 2 cups vegetable or chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Marinate the Salmon: In a bowl, mix 2 tablespoons olive oil, garlic, oregano, thyme, paprika, salt, pepper, and juice from one lemon. Add salmon cubes and coat evenly. Let marinate in the fridge for at least 15 minutes.
  2. Grill the Salmon: Preheat a grill pan over medium-high heat. Cook marinated salmon cubes for about 4 to 5 minutes on each side until cooked through. Remove from heat and garnish with fresh parsley.
  3. Prepare the Lemon Rice: Rinse jasmine rice under cold water until clear. In a saucepan, combine rinsed rice with broth, lemon zest, juice from one lemon, remaining olive oil, and salt. Bring to a boil, then reduce heat and simmer for 15 to 20 minutes until rice is tender.
