  • 1 pound ground beef
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 bell pepper (diced)
  • 1 jalapeño (seeded and finely chopped – optional for extra heat)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 can (14.5 ounces diced tomatoes, undrained)
  • 4 cups beef broth
  • 1 cup water
  • 1/2 cup long-grain white rice
  • 1 can (15 ounces black beans, drained and rinsed)
  • 1 cup frozen corn
  • Salt and pepper (to taste)
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
  2. Stir in diced onion, bell pepper, and jalapeño; sauté for 5 minutes until softened. Add garlic and cook for another 1-2 minutes.
  3. Mix in cumin, chili powder, smoked paprika, and oregano. Cook for 1 minute before adding diced tomatoes with their juice.
  4. Pour in beef broth and water; bring to a boil. Stir in rice and reduce heat to low. Simmer for about 15 minutes until rice is tender.
  5. Add black beans and corn; simmer for another 5 minutes until heated through.
  6. Season with salt, pepper, lime juice, and stir in cilantro before serving.
