  • 1 cup frozen corn
  • 1 can (10 ounces) diced tomatoes and green chilies
  • 1 packet (1 ounce) taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 box (8.5 ounces) cornbread mix
  • 2 eggs
  • ⅓ cup whole milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast iron skillet, cook the ground beef over medium heat until browned; drain excess fat.
  3. Stir in cream-style corn, frozen corn, diced tomatoes with chilies, and taco seasoning; cook for about 5 minutes.
  4. Layer 1 cup of cheddar cheese over the beef mixture.
  5. In a separate bowl, combine cornbread mix, eggs, and milk until just blended.
  6. Pour the cornbread batter over the beef layer evenly.
  7. Bake for 20-25 minutes until the cornbread is golden brown.
