  • 2 tablespoons strawberry jam
  • 8 ounces cream cheese (softened to cool room temperature)
  • 1 cup powdered sugar
  • ¾ teaspoon vanilla extract
  • 2¼ cups heavy whipping cream (very cold, straight from the fridge)

Instructions

  1. Prepare the strawberries by washing and slicing them. Toss with strawberry jam and let sit.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, blend sugar and oil, then add eggs, extracts, sour cream, and milk.
  4. Combine wet and dry mixtures gently without overmixing.
  5. Bake the batter in prepared pans at 350°F (175°C) for about 20 minutes.
  6. For frosting, beat softened cream cheese with powdered sugar, then gradually add cold heavy cream until fluffy.
  7. Once the cake layers have cooled, assemble by layering strawberries and frosting between the cake layers.
