  • 8 oz spaghetti
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup chopped fresh parsley
  • 1 tbsp butter
  • 1/2 cup chicken broth
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook spaghetti according to package instructions until al dente, then drain.
  2. In a large skillet over medium heat, warm olive oil. Season chicken with salt, pepper, and smoked paprika; cook for about 6-7 minutes per side until fully cooked. Remove from the skillet and slice.
  3. In the same skillet, melt butter and sauté onions and garlic for 2-3 minutes until softened.
  4. Add chicken broth to the skillet; simmer before stirring in heavy cream. Cook until slightly thickened.
  5. Lower heat and mix in shredded Monterey Jack and Parmesan cheeses until melted.
  6. Toss cooked spaghetti with the sauce until well coated; top with sliced chicken and parsley.
