  • 10 oz. mushrooms (button or baby bella)
  • 2 tablespoons salted butter
  • 2 large boneless skinless chicken breasts
  • Salt and pepper to taste
  • ½ cup all-purpose flour
  • 34 tablespoons olive oil
  • 2 ½ cups beef broth
  • 1 chicken bouillon cube or 1 tsp better than bouillon
  • 1 teaspoon soy sauce
  • 3 cloves garlic (minced)
  • ⅓ cup heavy cream

Instructions

  1. Season chicken with salt and pepper; dredge in flour.
  2. In a large skillet over medium heat, melt butter with olive oil and sear chicken until golden brown. Set aside.
  3. In the same skillet, sauté mushrooms until tender.
  4. Add flour and whisk in beef broth gradually to form a smooth sauce. Stir in soy sauce, garlic, and bouillon cube; simmer.
  5. Return chicken to skillet, add cornstarch slurry to thicken, then stir in heavy cream until heated through.
