  • 3 lb Yukon Gold potatoes, peeled and sliced
  • 4 Tbsp unsalted butter
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1/4 c all-purpose flour
  • 2 c half-and-half (or a mix of whole milk and heavy cream)
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp grated nutmeg
  • 1 Tbsp chopped fresh thyme (or 1 tsp dried thyme)
  • 2 Tbsp chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish with butter.
  2. Slice the Yukon Gold potatoes into even rounds and keep them in cold water.
  3. In a medium saucepan over medium heat, melt the butter. Add the diced onion until translucent, then stir in minced garlic until fragrant.
  4. Sprinkle flour over the mixture and stir for about two minutes. Gradually whisk in half-and-half until smooth.
  5. Season with salt, black pepper, nutmeg, and thyme; let thicken.
  6. Layer half of the potato slices in the greased dish, pour half of the sauce over them, then repeat with remaining potatoes and sauce.
  7. Cover with aluminum foil and bake for about 45 minutes; then uncover and bake for another 30 minutes until golden brown.
  8. Let rest for 15 minutes before serving and garnish with parsley.
