  • 8 cups chopped Lettuce
  • ¼ cup shredded Red cabbage
  • ¼ cup julienne Carrots
  • ½ cup black Olives
  • 2 sliced Roma tomatoes
  • 1/3 cup pepperoncinis
  • Croutons (to taste)
  • ¾ cup extra virgin Olive oil
  • 1 (.7 oz.) packet Zesty Italian Dressing Mix
  • 1/3 cup white vinegar
  • ¼ cup water
  • 1 tablespoon grated Romano cheese
  • 3 teaspoons sugar
  • 1 ½ teaspoons mayo
  • 1 teaspoon Dijon mustard
  • ½ teaspoon EACH: Italian seasoning, salt
  • ¼ teaspoon EACH: pepper, garlic powder

Instructions

  1. Prepare the dressing by blending olive oil, Zesty Italian Dressing Mix, vinegar, water, Romano cheese, sugar, mayo, Dijon mustard, Italian seasoning, salt, pepper, and garlic powder until emulsified. Refrigerate.
  2. Chop and prepare all salad vegetables and pat tomatoes dry with a paper towel to prevent sogginess.
  3. In a large bowl, combine all salad ingredients except for the dressing and toppings.
  4. Drizzle desired dressing over the salad mixture and toss gently to combine.
  5. Top with croutons just before serving.
