  • 1 lb smoked sausage (kielbasa or turkey sausage), sliced
  • 1 1/2 cups uncooked long grain rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 1/2 cups chicken broth
  • 1/2 cup barbecue sauce
  • Salt and pepper to taste
  • Optional garnish: Chopped green onions or parsley

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the sausage slices until browned, then remove from the pan.
  2. In the same skillet, add more oil if needed and sauté the chopped onion until translucent (about 5 minutes).
  3. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add uncooked rice to the skillet and toast for about 2–3 minutes until lightly golden.
  5. Pour in chicken broth and barbecue sauce, scraping any browned bits from the bottom of the pan.
  6. Return the seared sausage to the pan and bring everything to a simmer. Cover and reduce heat to low; let simmer for about 18–20 minutes until rice is cooked.
  7. Turn off heat and let it rest covered for an additional 5 minutes before fluffing with a fork.
