  • 1 lb chicken or turkey sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, warm the olive oil and brown the sausage slices for about 4–5 minutes. Remove and set aside.
  2. In the same skillet, sauté the onion and bell pepper for 3–4 minutes until soft; add minced garlic and cook for another 30 seconds.
  3. Stir in smoked paprika and black pepper before adding the uncooked rice; toast for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce, mixing well. Return the browned sausage to the pan.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for approximately 20–22 minutes until rice is tender.
  6. Let rest off heat for five minutes before fluffing with a fork and serving.
