Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs or breasts
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon smoked paprika
  • Garlic powder, salt, and pepper to taste
  • Optional: chopped parsley, crushed red pepper flakes, shredded cheese

Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat. Add chicken, season with salt, pepper, smoked paprika, and garlic powder. Sear until golden brown (5–7 minutes), then remove from the skillet.
  2. Deglaze the pan with chicken broth, scraping up browned bits.
  3. Stir in honey BBQ sauce; simmer for 2–3 minutes.
  4. Add uncooked penne pasta and enough water to cover it (about 1 to 1½ cups). Cover and simmer for 12–15 minutes until pasta is tender.
  5. Return chicken to the skillet; stir gently and simmer for another couple of minutes.
  6. Adjust seasoning if needed and garnish with parsley and crushed red pepper flakes before serving.
