Ingredients

  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 1/2 tsp paprika
  • 1/2 tsp pepper
  • 1/2 tsp dried minced onion
  • 1/2 tsp cayenne pepper
  • 1/2 tsp oregano
  • 1/4 tsp red pepper flakes
  • 1 tsp lemon juice
  • enough olive oil to make a paste (about 1 Tbsp)
  • 2 Tbsp Olive oil
  • 4 bone-in skin on chicken thighs
  • 1 medium yellow onion (diced)
  • 1 jalapeno pepper (seeded and diced)
  • 2 celery stalks (diced)
  • 1/4 tsp cayenne pepper
  • pinch of red pepper flakes
  • salt and pepper (to taste)
  • 1 cup DRY long-grain rice
  • 2 1/4 cup chicken stock or broth
  • Sliced green onions (for garnish)
  • Minced fresh parsley (for garnish)

Instructions

  1. Marinate chicken thighs with salt, garlic powder, paprika, black pepper, onion flakes, cayenne pepper, oregano, red pepper flakes, lemon juice, and olive oil.
  2. Preheat the oven to 350°F (175°C).
  3. In a Dutch oven, brown sliced sausage in olive oil over medium-high heat.
  4. Sear marinated chicken thighs skin side down until crispy.
  5. Remove chicken and sauté onion, jalapeño, and celery until softened.
  6. Season vegetables and stir in rice and chicken stock.
  7. Nestle chicken back in the pot and bring to a simmer.
  8. Cover and bake for 35 minutes; then uncover for an additional 10–15 minutes until rice absorbs liquid.
  9. Garnish with green onions and parsley before serving.
