  • 4 skinless salmon fillets
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 cup dry orzo pasta
  • 1 tsp dried thyme
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • juice from ½ lemon
  • ½ cup grated Parmesan

Instructions

  1. Season salmon fillets with garlic powder, sweet paprika, and half of the salt and pepper.
  2. Heat olive oil and butter in a nonstick skillet over medium-high heat; sear salmon for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté chopped onion and minced garlic until soft. Stir in thyme, remaining salt and pepper.
  4. Add dry orzo and toast for one minute before pouring in chicken broth. Bring to a boil then reduce to a simmer, cooking uncovered until most liquid is absorbed (about 8 minutes).
  5. Stir in spinach until wilted. Mix in lemon juice and Parmesan; return salmon to skillet for an additional few minutes until warmed through.
