  • 1 medium onion
  • 2 tablespoons avocado oil
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Let the chicken rest at room temperature for 30-60 minutes.
  2. Preheat the oven to 425ºF (218ºC) and prepare a roasting pan.
  3. Place the chicken breast-side up in the pan and pat dry.
  4. Stuff the cavity with halved onions.

  6. Coat the chicken evenly with the seasoning paste.
