  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1/4 cup flour
  • 2 eggs
  • 2/3 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 heaping teaspoon Italian seasoning
  • 3 tablespoons olive oil (divided)

Instructions

  1. Preheat oven to 400°F.
  2. Cut chicken breasts in half lengthwise; pat dry and season with garlic powder, salt, and pepper.
  3. Set up three bowls: one with flour, another with beaten eggs, and the last with panko mixed with parmesan and Italian seasoning.
  4. Heat two tablespoons of olive oil in an oven-proof skillet over medium heat.
  5. Dredge each chicken piece in flour, dip in egg, then coat with breadcrumb mixture.
  6. Fry breaded chicken pieces in the skillet for 2-3 minutes on each side until golden brown.
  7. Transfer the skillet to the oven and bake for an additional five minutes or until internal temperature reaches 165°F.
