  • ½ cup peach puree (fresh or canned)
  • 1 cup unsalted butter, room temperature (for buttercream)
  • 34 cups powdered sugar, sifted (for buttercream)
  • 34 tablespoons peach puree (for buttercream)
  • 12 tablespoons sparkling grape juice (for buttercream)
  • Pinch of salt (for buttercream)
  • Fresh peach slices for garnish
  • Sparkling sugar or granulated sugar for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar in another bowl until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Combine wet ingredients in a separate bowl; mix them into the butter mixture alternating with dry ingredients until just combined.
  6. Fill cupcake liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean. Cool completely.
  7. For the buttercream, beat softened butter until smooth; gradually add powdered sugar, followed by peach puree and sparkling grape juice until fluffy.
  8. Frost cooled cupcakes with peach buttercream and garnish with fresh peach slices.
