  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (113 g) unsalted butter, room temperature
  • ½ cup (100 g) sugar
  • ½ cup (100 g) light brown sugar
  • 1 cup (156 g) creamy peanut butter
  • 1 large egg, room temperature
  • 2 teaspoons (10 ml) vanilla extract
  • ½1 cup (144289 g) strawberry jelly or seedless jam
  • ¼ cup (50 g) granulated sugar for rolling (optional)
  • ¼ cup creamy peanut butter, melted (optional)
  • ¼ cup peanuts, roughly chopped (optional)

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream unsalted butter with sugars until smooth; mix in peanut butter. Incorporate egg and vanilla.
  4. Gradually combine wet and dry ingredients until just mixed. Chill dough for 30-60 minutes.
  5. Scoop dough into balls; make an indentation and fill with jelly.
  6. Bake for 14-15 minutes until edges are set. Cool before enjoying.
