  • 1 cup chopped peanut butter cups
  • 1/2 cup heavy cream (for ganache)
  • 3/4 cup semi-sweet chocolate chips (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, beat together the eggs and granulated sugar on high speed for about 4 to 5 minutes until thick and pale.
  4. Add in the vegetable oil, vanilla extract, and milk, mixing until just combined.
  5. Gently fold your dry ingredients into the egg mixture until no streaks remain.
  6. Pour the batter evenly into your prepared pan and smooth out the top. Bake for about 10-12 minutes until it springs back lightly when touched.
  7. Immediately invert the hot cake onto a sugared towel, peel off the parchment paper, and roll up your cake from one short end while still warm.
  8. In a bowl, beat together creamy peanut butter and powdered sugar until smooth, then add heavy cream and vanilla extract, mixing until light and spreadable. Fold in chopped peanut butter cups.
  9. Once your cake has cooled completely, carefully unroll it and spread an even layer of filling across its surface. Re-roll tightly without the towel and place seam-side down on a serving platter.
  10. For an optional chocolate ganache topping, heat heavy cream just until steaming and pour over chocolate chips in a bowl; stir until smooth and drizzle over the roll.
