  • 1 cup sun-dried tomatoes
  • 5 cloves garlic (minced)
  • 68 sage leaves
  • 1½ cups pumpkin puree
  • 2 cups low sodium chicken broth (or vegetable broth)
  • 1 teaspoon dried basil
  • ½ teaspoon ground cinnamon
  • 1 lb lean ground beef (or ground turkey, chicken, or lentils)
  • 1 medium onion (diced small)
  • 2 big carrots or 12-15 baby carrots (diced small)
  • 3 celery stalks (diced small)
  • â…“ cup dry white grape juice
  • 1 cup crushed tomatoes (no salt added preferred)
  • 1 cup milk of choice
  • Ground black pepper (to taste)
  • 1 lb pasta
  • Parmesan cheese (for garnish)

Instructions

  1. Heat olive oil in a medium pot and sauté sun-dried tomatoes, garlic, and sage until fragrant. Stir in pumpkin puree, broth, basil, and cinnamon; simmer for 15 minutes.
  2. In a separate pot, brown the ground meat and drain excess liquid.
  3. Sauté onions, carrots, and celery until softened; mix in the browned meat.
  4. Deglaze with grape juice then blend the pumpkin mixture until smooth and add to the pot.
  5. Stir in milk and season with pepper; simmer until thickened.
  6. Cook pasta as per package instructions; serve topped with Pumpkin Bolognese.
