  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 large egg
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 2 tbsp all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into a parchment-lined 9×13-inch baking dish. Bake for 8 minutes.
  2. In a separate bowl, beat cream cheese and sugar until smooth. Add eggs one at a time and stir in vanilla. Pour half over the crust.
  3. Mix pumpkin puree, egg, brown sugar, spices, and flour in another bowl. Fold into remaining cheesecake batter gently.
  4. Layer the pumpkin mixture over the cheesecake layer and bake for 35-40 minutes until slightly wobbly in the center.
  5. Cool to room temperature and chill in the refrigerator for at least 4 hours before serving.
