  • 2 tablespoons olive oil
  • 1 medium brown onion, coarsely chopped
  • 2 celery stalks, coarsely chopped
  • 3 medium carrots, peeled and sliced
  • 350g button chestnut mushrooms, halved
  • 3/4 tablespoon fresh rosemary, chopped
  • 1/2 tablespoon fresh thyme leaves
  • 2 garlic cloves, finely minced
  • 1 heaping tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 160 ml apple vinegar
  • 2 medium parsnips, peeled and sliced
  • 250g swede, chopped into chunks
  • 800 ml vegetable stock
  • 2 dried bay leaves
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and celery; sauté until soft (about 5 minutes).
  2. Stir in carrots and mushrooms; cook for another 5-7 minutes until softened.
  3. Add chopped rosemary, thyme, and minced garlic; stir for about 1 minute until fragrant.
  4. Mix in tomato paste, soy sauce, and sprinkle flour. Cook for another 2 minutes.
  5. Slowly pour in apple vinegar and vegetable stock while stirring. Add parsnips, swede chunks, bay leaves, salt, and pepper.
  6. Bring to a boil then reduce heat to low. Cover and simmer for 45 minutes.
  7. Check seasoning before serving hot.
