  • 1 1/4 cups lukewarm milk
  • 1/4 cup + 1 tablespoon unsalted butter, melted
  • 1 tablespoon vegetable oil
  • 2 large eggs
  • 1/2 cup granulated sugar (for filling)
  • 2 teaspoons ground cinnamon
  • 1 cup fresh raspberries, finely chopped
  • 1 cup powdered sugar (for glaze)
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix flour, sugar, instant yeast, and salt.
  2. In another bowl, whisk together lukewarm milk, melted butter, vegetable oil, and eggs.
  3. Combine wet and dry ingredients until just mixed into dough.
  4. Knead on a floured surface for about 8–10 minutes until smooth.
  5. Let rise in a greased bowl for about one hour until doubled in size.
  6. Prepare the filling by mixing granulated sugar and cinnamon; coat chopped raspberries in this mixture.
  7. Roll out dough into a rectangle and spread raspberry filling evenly.
  8. Roll tightly from one edge into a log shape; cut into twelve equal slices.
  9. Place slices in a greased baking pan; let rise for another thirty minutes.
  10. Preheat oven to 375°F (190°C); bake rolls for about twenty-five minutes until golden brown.
  11. While cooling slightly, whisk together glaze ingredients and drizzle over warm rolls before serving.
