Ingredients

Scale
  • 2 cups cherries, halved
  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 5 tbsp unsalted butter, melted
  • 1/3 cup canola oil
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Spread halved cherries on a parchment-lined baking sheet, sprinkle with sugar, and roast for about 10 minutes. Let cool.
  2. Reduce oven temperature to 325°F. Prepare an 8×8 baking pan by spraying it with non-stick spray and lining it with parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt.
  4. In a mixer, beat together sugar and eggs on high speed until light and fluffy (about 5 minutes). Mix in melted butter, oil, and vanilla extract.
  5. Gently fold in dry ingredients and half of the roasted cherries along with chocolate chips until just combined.
  6. Pour batter into the prepared pan and bake for 40-50 minutes until edges are set but middle is slightly underdone.
  7. Cool completely before cutting into squares.
