  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. In a bowl, mix olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper to create the marinade.
  2. Place the whole chicken in a resealable bag or bowl and coat it well with the marinade. Marinate in the refrigerator for at least 30 minutes.
  3. Preheat your oven to 425°F (220°C).
  4. Transfer the marinated chicken to a roasting pan. Surround it with quartered onion and pour in the chicken broth.
  5. Roast for about 1 hour and 15 minutes until golden brown and the internal temperature reaches at least 165°F (74°C).
  6. Let it rest for about 10 minutes before carving. Serve with roasted onions on the side.
