  • 1 head garlic
  • 3 tablespoons olive oil

  • 1 pound pasta (spaghetti or your choice)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for dairy-free)
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse cherry tomatoes and place them in a bowl with olive oil, salt, pepper, and optional red pepper flakes; toss to coat.
  3. Slice off the top of the garlic head, drizzle with olive oil, and sprinkle with salt.
  4. Spread the seasoned tomatoes on a baking sheet with the garlic cut side up; roast for 25-30 minutes until blistered.
  5. Cook pasta according to package instructions until al dente; reserve some pasta water before draining.
  6. Squeeze roasted garlic cloves into a bowl; mash slightly, then add roasted tomatoes and any juices.
  7. Toss cooked pasta into the tomato mixture; add reserved pasta water if needed for consistency.
  8. Fold in fresh basil just before serving; top with grated cheese.
