  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1 cup crumbled feta cheese
  • 1 cup fresh spinach, chopped
  • ½ cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil for drizzling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place chicken breasts between plastic wrap and pound to about ½ inch thick.
  3. In a bowl, mix salt, black pepper, garlic powder, oregano, and smoked paprika. Season chicken on both sides.
  4. In another bowl, combine feta cheese, spinach, sun-dried tomatoes, minced garlic, and red pepper flakes.
  5. Roll each chicken breast tightly with the filling inside; secure with toothpicks if necessary.
  6. Sear in an oven-safe skillet with olive oil for 2-3 minutes per side until golden brown.
  7. Transfer skillet to oven and bake for about 25 minutes until cooked through.
