  • 2 cloves garlic, minced

  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper until well combined. Form into small meatballs (about 1 inch in diameter).
  2. Heat olive oil in a pot over medium heat. Brown meatballs in batches for about 5 minutes. Remove from pot.
  3. Sauté onions in the same pot until translucent (about 3-4 minutes).
  4. Add chicken broth and bring to a boil; reduce to a simmer.
  5. Return meatballs to the pot and simmer for about 15 minutes.
  6. Stir in heavy cream and spinach; cook until spinach wilts (about 2 minutes).
