  • 3 1/2 cups grated zucchini (well-drained)
  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 box of corn muffin mix (8.5 ounces)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and drain it well using a clean kitchen towel.
  3. Sauté the chopped onion in a skillet over medium heat until translucent.
  4. In a large bowl, combine the drained zucchini, sautéed onions, half of the cheddar cheese, corn kernels, jalapeño, eggs, garlic powder, cumin, salt, and black pepper.
  5. Gently fold in the corn muffin mix until just combined; avoid over-mixing.
  6. Transfer the mixture to a greased baking dish and sprinkle with remaining cheddar cheese.
  7. Bake for about 50 minutes until golden brown and set in the center.
