  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 10 oz cremini mushrooms, sliced
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • Fresh thyme leaves
  • Salt and black pepper

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet, heat olive oil and butter over medium heat. Sauté diced onion until soft—about 5 minutes.
  3. Add garlic and mushrooms; cook until browned and moisture evaporates—around 8 minutes.
  4. Season with thyme, salt, pepper, and optional vinegar. Stir in cream cheese and Parmesan until combined; fold in Gruyère.
  5. Mix in one beaten egg once cooled slightly.
  6. Roll out the puff pastry on a floured surface; make diagonal cuts along both sides for braiding.
  7. Spread filling down the center; braid the strips over the filling. Transfer to the baking tray and brush with remaining egg.
  8. Bake for 20–22 minutes until golden brown and puffed.
