  • 2 tablespoons extra virgin olive oil
  • 4 cups thinly sliced onions
  • 6 medium-small Yukon gold potatoes, peeled and thinly sliced (1/8-inch thick)
  • 3/4 cup grated Gruyere cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 teaspoon of butter to butter the gratin or casserole dish
  • 1/3 cup chicken or vegetable stock
  • 1 teaspoon finely minced fresh rosemary

Instructions

  1. Preheat your oven to 400°F.
  2. In a sauté pan, heat olive oil over medium-high heat and cook sliced onions until golden brown (15-20 minutes).
  3. Toss sliced potatoes with remaining olive oil, half of the Gruyere, half of the Parmesan, salt, and pepper in a large bowl.
  4. Butter a gratin dish and layer caramelized onions at the bottom. Arrange potato slices on top, pour stock over everything, and sprinkle remaining cheese.
  5. Cover with aluminum foil and bake for about 50 minutes until fork-tender.
  6. Remove foil and broil for an additional 5 minutes until golden.
