  • 2 large cucumbers
  • 24 shrimp, peeled and deveined
  • 3 avocados, roughly mashed
  • Juice of 1 lime
  • 1/4 cup mayonnaise
  • 2 tablespoons olive oil
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon paprika
  • 3/4 teaspoon chili powder
  • 3/4 teaspoon dried oregano
  • Salt, to taste
  • 2 tablespoons Sriracha
  • 1 tablespoon sesame seeds

Instructions

  1. In a bowl, combine shrimp with olive oil and spices. Cook in a skillet over medium-high heat until opaque and pink (about 2 minutes per side).
  2. Mix mashed avocados with lime juice and salt in another bowl.
  3. Slice cucumbers lengthwise into quarters and scoop out some seeds to create boats.
  4. Spread about a tablespoon of avocado mash into each cucumber boat and add sushi rice on top.
  5. Place three shrimp on each boat, drizzle with spicy mayo (mayonnaise mixed with Sriracha), and sprinkle sesame seeds.
