  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 lbs ground beef
  • ¾ cup Italian style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • Marinara sauce for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat; sauté onion and red pepper until soft.
  3. Add garlic and cook until fragrant.
  4. In a bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, pepper, parsley, and sautéed veggies; mix until combined.
  5. Shape the mixture into a rectangle on parchment paper; layer with deli chicken followed by basil leaves and mozzarella.
  6. Roll tightly using parchment paper; seal the seam.
  7. Place seam-side down on a baking sheet; bake for about one hour.
  8. Let rest for ten minutes before slicing; serve with marinara sauce.
