  • 1 pound ground turkey
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 1 1/4 cups chicken broth
  • 14 oz can pureed tomatoes
  • 1/2 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 14 oz can red kidney beans, rinsed and drained
  • 1/2 teaspoon salt
  • 1/2 cup sweet corn, fresh or frozen
  • 1/2 cup fresh parsley, chopped
  • 2 teaspoons sweet paprika
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 1/2 teaspoon dried oregano
  • 1/4 teaspoon freshly grated black pepper
  • 3 tablespoons corn starch
  • 1/4 cup cold water

Instructions

  1. Heat olive oil in a large pot over high heat. Add ground turkey and brown without stirring.
  2. Sauté onions until glossy; add minced garlic and cook for another minute.
  3. Stir in chicken broth, pureed tomatoes, bell peppers, olives, beans, and salt; bring to a boil.
  4. Cover and simmer for 30 minutes; then uncover and simmer for an additional 15 minutes.
  5. Mix in corn and parsley; thicken with cornstarch if desired.
  6. Serve hot with toppings like Greek yogurt or green onions.
