- 1 pound ground turkey
- 1 large onion, chopped
- 1 garlic clove, minced
- 1 1/4 cups chicken broth
- 14 oz can pureed tomatoes
- 1/2 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 14 oz can red kidney beans, rinsed and drained
- 1/2 teaspoon salt
- 1/2 cup sweet corn, fresh or frozen
- 1/2 cup fresh parsley, chopped
- 2 teaspoons sweet paprika
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1 1/2 teaspoon dried oregano
- 1/4 teaspoon freshly grated black pepper
- 3 tablespoons corn starch
- 1/4 cup cold water
- Heat olive oil in a large pot over high heat. Add ground turkey and brown without stirring.
- Sauté onions until glossy; add minced garlic and cook for another minute.
- Stir in chicken broth, pureed tomatoes, bell peppers, olives, beans, and salt; bring to a boil.
- Cover and simmer for 30 minutes; then uncover and simmer for an additional 15 minutes.
- Mix in corn and parsley; thicken with cornstarch if desired.
- Serve hot with toppings like Greek yogurt or green onions.
