  • 1 lamb leg (bone-in, approx. 1.8kg / 4 lbs)
  • 1 Tbsp cumin seeds
  • 1 tsp paprika
  • 1 Tbsp dried oregano
  • 4 cloves garlic
  • 90g harissa paste (or chipotle paste)
  • 500ml chicken or beef stock
  • 1 sliced onion
  • 2 ½ Tbsp honey

Instructions

  1. Prepare the rub by grinding cumin seeds, paprika, oregano, garlic, and salt into a paste with harissa.
  2. Marinate the lamb by scoring the fat and applying the rub thoroughly; let it rest in the fridge if time allows.
  3. Bring the marinated lamb to room temperature before cooking.
  4. Preheat oven to 150C (300F). Place sliced onions in a roasting tray and place the lamb on top. Pour in stock and cover with foil.
  5. Roast for about 4.5 to 5 hours until tender, basting occasionally.
  6. Glaze with honey mixed with cumin seeds and return uncovered to roast at 190C (370F) for an additional 30-40 minutes until crispy.
