  • 1 pound baby potatoes (red or Yukon Gold)
  • Cooking spray
  • 4 tablespoons melted butter
  • 1 1/2 teaspoons minced garlic
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup finely grated parmesan cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Boil the baby potatoes in salted water for 18-22 minutes or until tender.
  2. Preheat your oven to 425°F and coat a sheet pan with cooking spray.
  3. Drain the cooked potatoes and place them on the prepared pan in a single layer. Smash each potato gently with the bottom of a glass.
  4. In a bowl, mix melted butter, minced garlic, Italian seasoning, salt, and pepper. Drizzle over smashed potatoes.
  5. Sprinkle parmesan cheese on top of each potato and roast in the oven for 20-25 minutes until golden brown.
  6. Serve hot, garnished with chopped parsley.
