  • 1/3 cup brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 and 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar (for rolling)
  • 1 and 1/2 tablespoons cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat softened butter until smooth, then mix in both sugars until light and fluffy.
  3. Add eggs and vanilla extract; beat until combined.
  4. In another bowl, combine flour, baking soda, salt, and cream of tartar; gradually add to the wet mixture until just combined.
  5. Shape dough into balls (about 1½ inches) and roll in the cinnamon-sugar mixture.
  6. Place on prepared baking sheets about two inches apart; bake for 9-11 minutes until edges are set.
  7. Allow cooling on the sheet for a few minutes before transferring to a wire rack.
