  • 1 cup water
  • 2 cups flax milk (or other plant milk)
  • 4 tablespoons coconut butter
  • 1 cup date sugar
  • 1 cup chocolate chips, melted with 1/4 cup coconut butter
  • 2 tablespoons coconut butter
  • 2 tablespoons cacao powder
  • 1/2 cups peanuts, chopped
  • Pinch salt
  • 2.5 cups organic powdered sugar
  • 1 cup natural peanut butter
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened flax milk (or other plant milk)
  • 2 tablespoons maple syrup

Instructions

  1. Proof the yeast by mixing warm water with yeast and letting it sit until foamy.
  2. In a bowl, whisk together dry ingredients: cassava flour, psyllium husk powder, date sugar, baking powder, baking soda, and salt.
  3. Combine the proofed yeast with flax milk and melted coconut butter into the dry mix to form dough.
  4. Allow dough to rise covered in a warm area for about 45 minutes.
  5. Roll dough into a rectangle, spread melted chocolate filling evenly, sprinkle chopped peanuts, then roll tightly.
  6. Cut into rolls and place in a greased dish; bake at 350°F for 20-25 minutes until firm.
  7. Prepare icing by mixing peanut butter, flax milk, maple syrup, vanilla extract, and powdered sugar until smooth; drizzle over cooled rolls.
