Ingredients

Scale
  • 1 cup unsalted butter (or dairy-free alternative), softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour (or gluten-free flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
  4. Chill the dough in the refrigerator for about 30 minutes to prevent spreading during baking.
  5. Preheat oven to 350°F (175°C). Scoop tablespoon-sized balls of dough onto lined baking sheets, spacing them out evenly.
  6. Bake for around 10 minutes or until edges are lightly golden while centers remain soft. Cool slightly on baking sheet before transferring to wire racks.
