  • 2 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • Pinch of salt (optional)
  • 1 cup roasted salted peanuts (finely chopped)

Instructions

  1. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy (about 4 minutes).
  2. Add eggs and vanilla extract; mix until combined. Gently fold in peanut butter.
  3. Gradually stir in flour, baking soda, baking powder, salt, and chopped peanuts until just mixed.
  4. Chill the dough for at least one hour (overnight is ideal).
