  • 1/4 cup olive oil
  • 1/3 cup water
  • 1 2/3 cups flour
  • 1/2 tsp sea salt

Instructions

  1. In a large mixing bowl, whisk together sourdough discard, olive oil, and water until combined. Gradually add flour and sea salt until a smooth dough forms.
  2. Perform stretch and folds by pulling each side of the dough over itself to develop gluten.
  3. Cover the dough with a tea towel and let it rest for 30 minutes.
  4. Divide the dough into eight equal pieces and roll each piece into thin circles on a floured surface.
  5. Heat a skillet over medium/low heat and cook each tortilla for about 3–4 minutes on each side until bubbles form.
  6. Serve warm or allow to cool before storing in an airtight container.
