  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (8.5 oz) box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Add onion and garlic; sauté until fragrant.
  3. Stir in corn, black beans, and diced tomatoes with seasonings; simmer for 5–7 minutes.
  4. In a separate bowl, mix corn muffin mix with egg and milk until just combined.
  5. Pour the beef mixture into a greased baking dish and spread cornbread batter on top.
  6. Bake for 25–30 minutes until golden brown; add shredded cheese and bake for an additional 3–5 minutes until melted.
