  • 15 oz can of black beans, drained and rinsed
  • 10 oz cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 2 ears of corn, kernels cut from the cob
  • 3 hearts of romaine, sliced
  • 1 bell pepper, chopped into large chunks
  • Avocado slices
  • Tortilla strips
  • 8 oz sour cream
  • ¾ cup mayo
  • 3 chipotle peppers in adobo sauce
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dill
  • ¼ teaspoon salt
  • 1 ½ tablespoons lime juice

Instructions

  1. Chop the romaine lettuce into bite-sized pieces and place in a large bowl.
  2. Prepare the corn, red onion, cherry tomatoes, and bell pepper; add them to the bowl with the lettuce.
  3. Rinse and drain the black beans before adding them to the mix. Toss gently to combine.
  4. In a blender, blend sour cream, mayonnaise, chipotle peppers, garlic powder, onion powder, dill, salt, and lime juice until smooth.
  5. Pour dressing over the salad and toss gently to coat all ingredients.
  6. Serve topped with tortilla strips and avocado slices.
